Celebrating Imogin and Scott’s wedding at the stunning Haute Cabrière in the beautiful Franschhoek. Imogin and Scott got ready at the Chamonix Guest House not far from the venue. I had the privilege of staying in the stunning A La Montagne Guesthouse for 3 nights, and what a treat. Thank you Belinda Fraser for the use of your guesthouse and for the referral!
I remember visiting Haute Cabrière approximately 3 years ago where they taught me the art of Sabrage (or at least tried). It is a technique for opening a champagne bottle with a saber/sword, used for ceremonial occasions. The wielder slides the saber along the body of the bottle to break the top of the neck away, leaving the neck of the bottle open and ready to pour. The force of the blunt side of the blade hitting the lip breaks the glass to separate the collar from the neck of the bottle. One does not use the sharp side of the blade. The cork and collar remain together after separating from the neck. It took about 5 bottles before I actually succeeded, and fell in love with the art … and their amazing champagne!.
